ARUGULA    Eruca vesicaria sativa (p) full sun
ROQUETTE image ROQUETTE (h) 12-18 inches. A mustard-like plant with horseradish-flavored leaves and edible white, yellow or purple flowers in summer. Use the flowers, leaves and seeds in salads and stirfries. Cook young leaves like spinach. Grow in a sunny spot in rich, well-drained soil.
BASIL    Ocimum basilicum (p) full sun or part shade
GENOVESE image GENOVESE (h) 18 inches. Clusters of small, white tubular flowers appear in summer. They have a lovely sweet classic basil flavor. The leaves are green, oval, and pointed, and smell wonderful when crushed.
LEMON image LEMON (h) 18-24 inches. An annual herb with lemon-scented foliage and white to purplish flowers in summer. Ideal for soothing herbal teas or flavoring poultry, fish and legume dishes. Grow in a sunny spot in well-drained soil. Keep moist in dry weather.
SWEET image SWEET (h) 12-18 inches. Highly aromatic, annual herb with large, heart-shaped leaves, a compact habit and white flowers in summer. Use fresh or dry leaves to flavor tomato dishes, pasta, fish, poultry and soups. Grow in moist, well-drained soil in a sunny position. Keep moist and protect from snails and slugs.
THAI image THAI (h) 18-24 inches. This variety of basil is used widely in Thai and Vietnamese cooking to flavor fish, soup, curries and beef dishes. Young shoots may be harvested for four months or more. Grow in a sunny to partly shaded position in moist, well-drained soil.
CHAMOMILE     Matricaria recutita (a) full sun
GERMAN CHAMOMILE image GERMAN CHAMOMILE German chamomile is an annual that reaches 3 feet, with downy stems, feathery leaves and daisy-like flowers with yellow centers and white rays. The dried flower heads are used, an essential oil is distilled from the flowers, as well as a liquid extract. Chamomile is one of the most widely used herbs. It is a carminative, remedial tonic, which also has anti-inflammatory properties and is used to encourage digestion and boost the immune system.
CHIVES    Allium tuberosum (p) full sun
COMMON image COMMON (h) 12-18 inches. Clumps of grass-like leaves with a distinct onion flavor, are a feature of this perennial herb. Grow in a sunny position in well-drained soil. Use to flavor cheeses, salads and stir-fries. Great with potatoes and eggs, or as a garnish for soups and sauces.
GARLIC image GARLIC (h) 12-18 inches. A flat leaf version of chives, with a slightly more mellow distinct flavor of garlic. Blooms are white and edible. Grows in a sunny position in well-drained soil. Use to flavor cheeses, salads and stir-fries. Great with potatoes and eggs, or as a garnish for soups and sauces.
CILANTRO     Coriandrum sativum (a) full sun
CORIANDER image CORIANDER (h) 18-24 inches. An annual herb with flat, parsley-like leaves and white flower heads in summer. The fresh leaves can be used to flavor South East Asian, Mexican and Middle Eastern cuisines. The seeds and roots are also good for pickling.
DILL    Anethum graveolens (a) full sun
FERNLEAF image FERNLEAF (h) 24-36 inches. Aromatic herb with finely cut foliage and sprigs of greenish-yellow flowers in summer. The seeds and leaves can be used with potatoes, eggs, fish and seafood dishes and for pickling. Grow in full sun in well-drained soil.
